A soft bread can be formed into many different shapes and very popular in bakeries.

Instructions

Soft Bread
  • 1Mix all ingredients for 2 minutes at low speed and 8 minutes at high speed.
  • 2Maintain temperature of the dough at 28°C.
  • 3Rest the dough for 30 minutes.
  • 4Cut pastries into equal portion: 40g each.
  • 5Rest the dough at 30°C for 30 minutes.
  • 6Shape and put into the mold.
  • 7Ferment at 35 - 37°C for 90 minutes.
  • 8Brush with egg yolks to make the golden colour.
Baking:

Temperature: 220°C

Time: 12 minutes
