Instructions

- 1Mix all ingredients for 2 minutes at low speed, 8 minutes at high speed.
- 2Maintain temperature of the dough at 28°C.
- 3Rest for 30 minutes in the fridge.
- 4Cut into equal portions: 40g each, or form to desired shape.
- 5Let the dough sit out at 30°C for 30 minutes.
- 6Shape.
- 7Ferment at 35 - 37°C for 90 minutes.
- 8Chiên với SHORTENING SATELLITE.
